Zucchini Brownies
Zucchini in a cake? That’s right! It’s a great vegetable because you can use it to prepare a whole lot of dishes: pancakes, stew, vegetable stew, salads, vegetable pate… and even a sweet cake. I’m sure everyone will love zucchini in this form – I can guarantee that ?
Preparation:
I melted the butter and chocolate. I whipped the yolks with sugar, and I beat the egg whites with a pinch of salt and potato starch until stiff. Then I combined the yolk and sugar mixture with cooled but still liquid chocolate. I removed moisture from the zucchini and stirred it in along with sifted flour, cocoa and baking powder. At the end I folded in the egg whites.
I transferred the batter into the tin and baked it at 180°C for about 30 minutes (at the end I tested the cake for doneness with a toothpick). When ready, I glazed the cake with chocolate melted in water bath, cut it into squares and topped with fresh raspberries ?
