Coconut Pancakes with Apple Mousse

Preparation:

I mixed the egg with the coconut drink and flour until the mixture was smooth. I heated the butter and fried thin pancakes. In the meantime, I cut the apple into small cubes and heated it in a pot with cinnamon until it softened and began to release its sweet scent. I stirred in the honey and cocoa, and then blended the whole thing into a velvety mousse. I spread the mousse on the pancakes, gently folded them and decorated them with fresh mint leaves. It turned out delicious!
