Finger-Licking Chocolate Breakfast

Hello Sweethearts 🙂 Today I have a recipe for a sweet breakfast for you. It takes a bit of time and attention to prepare but the final effect is definitely worth it!

 

Preparation:

Filling: Save two tablespoons of yogurt as you will need them for the omelet. Blend the remaining yogurt with chia seeds, one tablespoon of xylitol and desiccated coconut and refrigerate overnight. A pro tip for you 🙂 you have to combine the filling ingredients thoroughly, otherwise chia seeds will stay on the bottom. 

Omelet:  I mixed the flour, eggs, cocoa, 1 tablespoon of xylitol, plant-based milk and 2 tablespoons of yogurt until smooth. Then I fried the omelet in a pan with no fat. When ready, I put onto a plate to cool it down a bit (this prevents the yogurt filling from melting), and then I spread it with the yogurt mixture. In the meantime I melted the chocolate in a pot and topped the omelet with chocolate glaze and desiccated coconut.
