Pudding with banana mousse
Today breakfast with chia seeds (you can replace them with linseed) and a banana. The banana supplies us with vitamins and minerals (potassium!), but unfortunately, it also has a high GI, so diabetics should avoid it.
Because it’s quite caloric, it’s better to avoid bananas when you are trying to lose weight. People who suffer from digestive disorders should eat bananas served hot. That’s why I’m showing two mousse versions in the recipe: hot and cold.
I added chia seeds to coconut milk (preferably thick), stirred it with a tablespoon of cocoa, honey and salt, and put in the fridge overnight. In the morning I put it out, so it wasn’t too cold.
Banana mousse served hot:
I simmered the banana in a saucepan in clarified butter, added a little bit of coconut milk (2-3 tablespoons), one blanched date and a tablespoon of cocoa. I blended it all together.
Banana mousse served cold:
I mashed the banana with a fork, added a little bit of coconut milk (203 tablespoons), one blanched date and a tablespoon of cocoa. I blended it all together.
I put the mousse on the chia pudding, sprinkled it with crushed raw chocolate and blueberries.
