Sweet potato and dill soup

Do you like dill?

Its intriguing shape and unique, a bit anise flavor? I do, mostly because it’s healthy! Fennel is antioxidants rich, which neutralize free radicals, and potassium lowers the blood pressure and protects blood vessels. Excellent for people with gastric problems, suffering from bloating and constipations (all you moms out there, you know what the dill tea is for?), dill is anti cramping for the whole gastric system.

There are scientists that claim that intake of dill in any form, leaves, tubers, teas, oils, potions, can improve your mood!

Preparation:

Slice the dill along with leek and boil on a frypan using coconut oil, adding thyme, salt and pepper. In a separate pot, cover diced sweet potato with water. When on the frypan the vegetables will go soft, add them to the sweet potato pot and blend all together; boil it all for a few more minutes, adding the rest of the spices and a few drops of vinegar.

I’ve poured the sup to cups, added few drops of chili oil and slightly fried sunflower seeds.

It was…Delicious! 🙂
