Vegetable Egg Rolls
Do you like breakfast wraps? I have prepared a great recipe to show you yet another version! Gluten-free, lactose-free, and perfect for all the fans of high protein breakfasts. You can have them at home or put them in your lunchbox (if you’re looking for more ideas for meals for work or school, you can find them HERE). You can also serve them as a snack at a meeting with friends, simply change the filling according to your preferences. My favorite version is the one with dried tomatoes and arugula. Try it yourself!
Preparation:
I cracked the eggs into a bowl, added coconut drink, spices, finely chopped chives and dill. I mixed all the ingredients. I heated the oil in a frying pan, poured in the egg mixture and fried on both sides. I transferred the pancake onto a plate and topped it with arugula and sun-dried tomatoes. I rolled it and cut it into smaller pieces. Easy, isn’t it? 🙂
