Veggie Burgers
I know that you are more and more often looking for healthy, meat-free recipes. Even if you are not on a vegetarian or vegan diet, it is still worth diversifying your menu with more plant-based solutions from time to time. That’s why I want to show you my idea for vegetable burgers! They are rich in flavor, vitamins, and fiber. In addition, if you cook with your kids in mind, here you can sneak in a whole bunch of vegetables onto their plates. Carrots, zucchini, and even cauliflower, broccoli or spinach that are sometimes difficult to include in a child’s diet. All in one!
Preparation:
I soaked the oat flakes in hot water and set them aside. Then I put the onion, carrot, zucchini, celery, broccoli, and cauliflower into a pot and cooked them for about 25 minutes, adding some salt at the end. I combined the strained and chilled vegetables with oat flakes. Next, I added cooked, strained spinach, ground oats, parsley, basil, oregano, and olive oil. I mixed all the ingredients and shaped them into burgers. I baked them until golden brown and served them with a salad. Enjoy!
