Zucchini Rolls
You know that I never get bored! 😉 And that’s why I like to tweak things a little bit, try and experiment, even in tried and tested recipes. Sometimes it results in a completely new recipe, other times it’s just a small improvement. This time, I managed to speed up the preparation time of an already quick dish. Do you remember grilled zucchini rolls with feta cheese? I shared this recipe with you HERE.
I swapped the dried tomatoes that needed soaking for those in oil. I saved time on soaking, but in order not to change the caloric content of the dish too much, I grilled the zucchini in a dry frying pan instead of fat. This time, I did not prepare any spread, and I simply placed the ingredients on the zucchini. Let me know which option suits you better! 🙂

Preparation:Â
I cut the zucchini lengthwise into long slices and grilled them on a dry frying pan. I cut the feta cheese into sticks and the dried tomatoes into strips. I put cheese and tomatoes on the grilled zucchini slices and rolled them up. That’s it!Â
