Sweet Potato and Apple Pancakes
Today I prepared for you a recipe for autumn pancakes with sweet potatoes and apples. It’s great for both the little and the big ones 🙂
Preparation
I peeled the sweet potato and the apple and grated them. Then I added the remaining ingredients and kneaded everything. I formed pancakes, put them on a baking tin lined with baking paper and baked for about 25 minutes at 180°C. You can replace the millet flour in this recipe with chestnut flour. It will add a slightly sweeter flavour.
Why is chestnut flour good for you?
It’s a great gluten-free substitute for traditional flour. It’s perfect for baking but also for pancakes or dumplings. Chestnuts are a rich source of nutrients. They contain aescin – a substance which widens blood vessels. Eating chestnuts helps regulate blood cholesterol level thanks to the high content of unsaturated fatty acids. They are also a great source of potassium, folic acid, B vitamins and lecithin which boosts memory. That’s why I promise it’s not the last cooking adventure with chestnuts in my kitchen! 🙂
