Carrot and tomato cream with basil and walnuts

I switched completely into autumn mode, also in the kitchen. Fortunately, this season does not mean total emptiness in the vegetable markets and you can still get both tomatoes and  root vegetables which are available all winter. Today i will share with you the recipe for a carrot – tomato cream with basil and walnuts.

Preparations:

Blanch the tomatoes in boiling water, peel and wash the remaining vegetables. In a deep frying pan place the butter, add onion, finely chopped garlic and fry for about 3 minutes. Then add the rest of the vegetables cut into cubes, add  water, spices and simmer until soft. At the end of cooking add fresh basil. Decorate with fresh basil leaves and sprinkle with pepper. Place some walnuts on top.
