Pancakes with Blackcurrants

Did you know that blackcurrant is an underrated superfruit? Many people try foreign superfoods, while there’s this amazing source of vitamin C growing in their gardens. That’s why I had to share with you this recipe that will appeal to all fans of sweet meals, and at the same time you can sneak these wonderful fruits in. Ladies and gentlemen, here they are:  blackcurrant pancakes. 🙂

What’s more, I can recommend this recipe to people who avoid gluten and dairy products in their diets. Bon Appetit!

 

Preparation: 

I mixed the eggs with flour, coconut drink, and salt. I heated the butter in a frying pan, scooped small portions of batter and fried over low heat on both sides until golden brown. Next, I put them onto a plate, sprinkled with maple syrup, and topped with blackcurrants. I decorated it with mint leaves. What a treat!
