Salad with fish and green, healthy pesto

Salads dont have to be boring.

I like to prepare them in different variants, with various ingredients. It’s an easy and quick way to eat something nutritious in the office or on the road.
If you have a good and proven source of fish, I recommend a salad with grilled salmon and green pesto.

Preparation:

Diced the onion and simmer slightly. Chop peppers and feta and mix it with the onion and spinach leaves. Sprinkle with pine nuts. >Then prepare the dressing by mixing 2 tablespoons of olive oil, vinegar, teaspoon of honey and a tablespoon of lemon juice.

In the meantime, grill the salmon and prepare the pesto, by mixing all the ingredients.

To a prepared salad with dressing, add pieces of grilled salmon with pesto.
