Vegetable Pancakes

Vegetables should be the basis of our diet! The recommended minimum daily intake is about 400 grams. Sometimes you ask how to easily introduce more of them into your daily menu. Bet on vegetable and fruit juice, smoothies, soups, salads and different variations on the subject of pancakes/pies. This kind of meal will make a great snack or dinner, you can pack it into your lunchbox, but also have it for breakfast. Just prepare an additional portion while preparing dinner the day before to have a fuss-free morning ?

 

Preparation:

I chopped the onion and sautéed it in hot butter. I grated the vegetables, left them for about 15 minutes and squeezed to get rid of excess juice. Then I added sautéed onions, eggs, ground oat flakes, spices, and chopped dill to the vegetables. I mixed everything thoroughly and set aside for a few minutes.

I formed pancakes from the mixture, put them on a baking tray and into the oven preheated to 180°C. I baked them until golden brown. You can serve them with dill sauce made with coconut yoghurt with a little olive oil and pepper ?
