Chocolate & Coconut Waffles with Strawberries

Strawberry season has begun! I know that most of you wait for this time all year. And you’re right because strawberries are not only delicious fruit, but also a low-calorie source of vitamin C! What’s more, they are rich in minerals, fiber and compounds with antioxidant and anti-inflammatory properties. They taste best from June to August, so enjoy them now! 🙂

I will make it easier for you with this recipe for chocolate & coconut waffles with strawberries. They are great as breakfast or a healthy dessert. Thanks to the gluten-free ingredients, people with celiac disease or gluten allergy can also use the recipe. Believe me, these waffles are simply delicious!

However, if you do not like the taste of coconut, remember that you can replace the coconut flour with another type, e.g. rice or a mixture of gluten-free flours. My Foods by Ann mixes, which you can find HERE will also be perfect.

Preparation:

I mixed the eggs with coconut flour, coconut drink, baking powder, salt, and cocoa. I set the mixture aside for a few minutes. I greased the waffle iron with melted fat using a brush. Then I poured the batter and baked waffles. I put the waffles onto a plate and decorated them with sliced strawberries.
