Chia pudding with mango

I know you are keen on various combinations with chia seeds 🙂 It’s a good option for a nutritious and tasty breakfast.

From time to time I include tropical fruits in my diet. Today it’s mango time.

Mango is a good source of antioxidant vitamins, especially carotenoids and vitamin C. This fruit is also rich in fiber and mangiferin. Mangiferin is a polyphenol with antioxidative properties. According to scientists, it is also anti-inflammatory, immunomodulating and immunostimulant. It helps fight germs and viruses. Mango is used in fruit salads, ice cream, sweet dishes, starters and meat dishes. Today I offer You my recipe for a delicious chia pudding with mango.

 

Preparation:

I put the pudding ingredients into a bowl: coconut milk and almond milk with chia seeds, desiccated coconut and maple syrup. I stirred  it all vigorously for a couple of minutes and let the mixture cool in the fridge for one hour. Meanwhile, I prepared the mousse by simply blending the ingredients. I poured it over the cool pudding and put it back to the fridge again. I decorated the pudding with some fruit before serving.
