Shakshuka with Avocado & Parma Ham

My Healthy & Active CHALLENGE continues, and I must admit that I’m really involved. This does not mean, however, that I have forgotten about those who regularly come here for recipes! I know that you are looking for ideas for quick, healthy and tasty dishes. That’s why today I have the popular shakshuka with not so obvious ingredients! 🙂

I love it when shakshuka is full of flavor, so I highlight the taste of tomatoes with a mixture of spices and fresh parsley. Utterly delicious!

 

Preparation: 

I diced the onion and ham and fried them in hot oil. I added sliced tomatoes, spices and stewed while stirring for about 1 minute. I cracked the eggs into the pan with the tomato sauce, reduced the heat and covered the dish with a lid. I waited until the eggs were set. I sprinkled the shakshuka with chopped parsley and topped it with avocado cut into strips. So simple and tasty.
